Whoopi Goldberg in my kitchen.

I saw this recipe during a baking show on TV once and I wanted to try it out ever since. Surfing around the internet I even found a funny little story about the origin of its name:

“According to Amish legend, when children would find these treats in their lunch bags, they would shout “Whoopie!” What’s cooking america

That’s it about history for now, let’s start baking!

 

Chocolate Whoopie Pies

Ingredients

1 3/4 cups flour

3/4 cup cocoa powder

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

3/4 cup butter

3/4 cup sugar

1 egg

1 teaspoon vanilla extract

1/4 cup buttermilk

1/2 cup strong coffee or or 1/2 cup water

Filling

1/4 cup vegetable shortening (Magarine)

1/4 cup butter

1 cup powdered sugar

1 1/2 teaspoons vanilla extract

1/2 cup light corn syrup

Do not trust a coffee shop.

What would you do if you find out that your favorite coffee shop stopped producing your favorite baked good??

  1. Write an angry letter to the owner.
  2. Go home and cry.
  3. Make your own. : )
So all you have to do is google for the recipe, buy all the ingredients and get started!
Here is an example for the recipe I had to look up, because my favorite coffee shop discontinued the toscasnäckor..

Ingredients:
1/2 packet yeast
75g butter
6cups flour
2cups milk
2tsp sugar
filling:
3tsp butter
2tsp sugar
glaze:
50g almond flakes
50g butter
1/2cup sugar
1tsp flour
1tsp milk
Grind the butter in 6cups of the flour. Dissolve the yeast in a bit of cold milk. Mix the yeast, the rest of the cold milk and sugar in the butter and flour mixture. Work together and add more flour if needed.

Put the dough on a floured surface. Roll into an oblong square, about 1cm thick. Stir together butter and sugar for the filling and spread on the dough. Roll up. Cutting length in about 24 pieces. Place in paper cases on a baking sheet. Let buns rise, about 1 hour.
Mix ingredients for glaze in a small heavy saucepan. Bake the buns at 250°C, 3-4min. Let the gaze boil and spread it on the buns. Bake another 3-4 minutes.
